large eggplants

medium potatoes

red chili powder

1 teaspoon

oil

1 tablespoon

mustard seeds

1 teaspoon

cumin seeds

1 teaspoon

Directions

Step 1:

Chop the eggplant and poatoes in to cubes and season with red chilli powder.

Step 2:

Heat oil in a pan and once hot, add in the mustard and cumin seeds and allow them to splutter.

Step 3:

Add in the chopped veggies and roast for a minute or 2.

Step 4:

Add in all the spice powders and salt, mix well and cook on a low flame until the veggies are tender.

Step 5:

Serve hot!
