Heat oil in a large pan over medium heat.
Add cumin, mustard and fennel seeds and cook for 1 minute.
Add turmeric, red chilli, coriander, garam masala, amchur powder, salt and asafoetida and cook for 1 minute.
Add onion, garlic, ginger and green chillies and cook for 3-4 minutes.
Add potato and cauliflower and cook for 5 minutes.
Add green peas and cook for 2 minutes.
Add cilantro and cook for 1 minute.
Serve hot with chapati or rice. Enjoy!
