Ingredients

whole wheat flour

2 cups

salt

1/2 teaspoon

ajwain (carom seeds)

1/2 teaspoon

oil

2 tablespoons

warm water

1/2 cup

mashed potatoes

1 cup

garam masala

1/2 teaspoon

red chili powder

1/2 teaspoon

cumin powder

1/2 teaspoon

amchur powder

1/4 teaspoon

coriander powder

1/4 teaspoon

turmeric powder

1/4 teaspoon

dry mango powder

1/4 teaspoon

chopped cilantro

1 tablespoon

Oil for cooking

Directions

Step 1:

In a large bowl, mix together the whole wheat flour, salt, ajwain, and oil.

Step 2:

Add the warm water and mix until a soft dough forms. Knead the dough for 5 minutes until it is smooth and elastic.

Step 3:

Cover the dough and let it rest for 15 minutes.

Step 4:

In a separate bowl, mix together the mashed potatoes, garam masala, red chili powder, cumin powder, amchur powder, coriander powder, turmeric powder, dry mango powder, and chopped cilantro.

Step 5:

Divide the dough into 8 equal portions.

Step 6:

Take one portion of the dough and roll it into a circle.

Step 7:

Place a spoonful of the potato mixture in the center of the circle.

Step 8:

Bring the edges of the circle together and pinch them to seal the filling inside.

Step 9:

Flatten the stuffed dough ball and roll it out into a circle.

Step 10:

Heat a griddle or skillet over medium heat.

Step 11:

Place the paratha on the griddle and cook for 2 minutes.

Step 12:

Flip the paratha and cook for another 2 minutes.

Step 13:

Brush some oil on the paratha and cook for 1 minute.

Step 14:

Flip the paratha and brush some oil on the other side.

Step 15:

Cook for 1 minute or until the paratha is golden brown.

Step 16:

Serve hot with yogurt or pickle. Enjoy!
