Heat oil in a large pan over medium heat.
Add cumin and mustard seeds and cook until they start to sizzle.
Add garlic and ginger and cook for 1 minute.
Add onion and cook until softened, about 5 minutes.
Add tomatoes and cook for another 5 minutes.
Add potatoes and cook for 5 minutes.
Add spinach and cook for 2 minutes.
Add garam masala, coriander powder, cumin powder, turmeric powder, and salt. Stir to combine.
Add water and bring to a boil.
Reduce heat to low and simmer for 15 minutes, or until potatoes are cooked through.
