Heat oil in a large pan over medium heat.
Add cumin and mustard seeds and let them sizzle for a few seconds.
Add turmeric, coriander, garam masala, and red chili powder and stir for a few seconds.
Add potatoes and green peas and stir to coat with the spices.
Add onion, garlic, ginger, and green chilies and cook for a few minutes until the onion is softened.
Add tomatoes and salt and cook for a few more minutes until the tomatoes are softened.
Add a few tablespoons of water if the mixture is too dry.
Cover and cook for 10-15 minutes until the potatoes are cooked through.
Stir in cilantro and serve hot with chapati or rice.
