In a large bowl, mix together the flour, salt, and oil.
Add the mashed potatoes and mix until combined.
Add the cumin seeds, coriander powder, red chili powder, garam masala, and cilantro. Mix until combined.
Add enough water to make a soft dough. Knead the dough for 5 minutes.
Divide the dough into 8 equal portions.
Roll each portion into a circle.
Heat a griddle or tawa over medium heat.
Place the rolled parantha on the griddle and cook for 1 minute.
Flip the parantha and cook for another minute.
Spread some ghee on the parantha and cook for 1 minute.
Flip the parantha and spread some more ghee. Cook for 1 minute.
Serve hot with yogurt or pickle. Enjoy!
