About

Alu Gobhi is an Indian dish made with potatoes and cauliflower. It is usually cooked with spices such as cumin, coriander, turmeric, and garam masala. The potatoes and cauliflower are usually cut into small pieces and added to a tempering of oil, cumin and mustard seeds. The spices are added and the vegetable is cooked on a slow flame and then spiced. It is often served with roti, parantha or dal rice.

large onion, chopped

cloves garlic, minced

inch ginger, minced

green chili, chopped

large potato, cubed

1

head cauliflower, cut into florets

frozen peas

1/2 cup

water

1/4 cup

Salt to taste

Fresh cilantro, chopped

Directions

Step 1:

Heat oil in a large skillet over medium heat.

Step 2:

Add cumin and mustard seeds and cook until they start to sizzle.

Step 3:

Add turmeric, coriander, garam masala, and red chili powder and stir to combine.

Step 4:

Add onion, garlic, ginger, and green chili and cook until onion is softened, about 5 minutes.

Step 5:

Add potato and cauliflower and cook for 5 minutes.

Step 6:

Add frozen peas and water and bring to a simmer.

Step 7:

Cover and cook until vegetables are tender, about 10 minutes.

Step 8:

Add salt to taste and stir in fresh cilantro.

Step 9:

Serve hot with rice or naan. Enjoy!
