Heat oil in a large skillet over medium heat.
Add cumin and mustard seeds and cook until they start to sizzle.
Add turmeric, coriander, garam masala, and red chili powder and stir to combine.
Add onion, garlic, ginger, and green chili and cook until onion is softened, about 5 minutes.
Add potato and cauliflower and cook for 5 minutes.
Add frozen peas and water and bring to a simmer.
Cover and cook until vegetables are tender, about 10 minutes.
Add salt to taste and stir in fresh cilantro.
Serve hot with rice or naan. Enjoy!
