Aloo Gobi Masala is a popular vegetarian dish from the Indian subcontinent, especially in North Indian cuisine. The main ingredients are potatoes (aloo) and cauliflower (gobi) cooked in a melange of spices. It's typically yellowish in color due to the use of turmeric. It is usually served with chapatis, rotis or rice. It's versatile dish which can be enjoyed in lunch or dinner.

Heat oil in a pan and add cumin seeds. Once they crackle, add the chopped onions and sauté till golden.
Add the chopped tomatoes and green chillies. Sauté till the tomatoes are cooked and the oil starts separating.
Add turmeric powder, red chilli powder, garam masala and salt. Mix well.
Add the cubed potatoes and cauliflower florets. Mix well so the vegetables are coated with the spice mix.
Cover the pan and let it cook on medium heat till the vegetables are cooked and tender. Stir occasionally.
Serve the Aloo Gobi Masala hot with rotis or rice.
