Heat oil in a pan over medium heat.
Add cumin seeds and let them sizzle.
Add the chopped onion and sauté until it turns golden brown.
Add the ginger-garlic paste and sauté for a few seconds.
Add the chopped tomato and green chili and sauté for a few minutes.
Add the potatoes and cauliflower and mix well.
Add the coriander powder, garam masala, turmeric powder, red chili powder, amchur powder, and salt. Mix well.
Cover the pan and cook for 10 minutes, stirring occasionally.
Uncover the pan and cook for a few more minutes until the potatoes and cauliflower are cooked through.
Garnish with chopped cilantro and serve hot.
