Boil the potatoes in a pot of water until they are tender.
Once the potatoes are cooked, peel and mash them.
Heat the oil in a pan and add the chopped onion and garlic. Fry until the onion is golden brown.
Add the cumin powder, coriander powder, red chilli powder, garam masala and salt to the pan and fry for a few minutes.
Add the mashed potatoes to the pan and mix everything together.
Cook for a few minutes until the potatoes are cooked through.
Add the ghee and mix everything together.
Serve the Aloo Chokha hot with chapatis or parathas.
