Heat oil in a pan and fry the potato cubes until golden brown and crispy.
Drain the potatoes on a plate lined with paper towels to remove excess oil.
In a large bowl, add the fried potatoes, salt, turmeric powder, red chili powder, cumin powder, chaat masala, chopped onion, tomato, green chilies, and coriander leaves.
Squeeze lemon juice over the mixture and give everything a good mix until well combined.
Serve the Aloo Chaat immediately while it's still warm and crispy.
