Heat oil in a pan over medium heat.
Add cumin and mustard seeds and let them crackle.
Add potatoes and capsicum and sauté for a few minutes.
Add turmeric powder, red chilli powder, coriander powder and garam masala.
Mix well and cook for 5-7 minutes, stirring occasionally.
Add salt to taste and mix well.
Cook for a few more minutes until the potatoes and capsicum are cooked through.
Garnish with chopped coriander leaves and serve hot.
