Heat oil in a pan over medium heat.
Add cumin seeds and let them sizzle for a few seconds.
Add the diced potatoes and stir to coat with the oil.
Add the coriander powder, turmeric powder, red chilli powder, garam masala, amchur powder, chaat masala and salt.
Stir to combine and cook for 5-7 minutes, stirring occasionally, until the potatoes are cooked through and lightly browned.
Remove from heat and stir in the chopped cilantro.
Serve hot with chapatis or parathas. Enjoy!
