Heat the oil in a large skillet over medium heat.
Add the cumin, mustard, and fenugreek seeds and cook until they start to sizzle.
Add the turmeric, red chili powder, coriander powder, garam masala, amchur powder, and salt and stir to combine.
Add the ginger, garlic, onion, tomatoes, and green chili and cook until the vegetables are softened, about 5 minutes.
Add the cilantro and chickpeas and stir to combine.
Add the water and bring to a simmer.
Reduce the heat to low and simmer for 10 minutes, stirring occasionally.
Serve hot with rice or naan. Enjoy!
