Wash and dry the mangoes.
Cut the mangoes into small cubes and place them in a large bowl.
Add the mustard oil, fennel seeds, fenugreek seeds, cumin seeds, coriander seeds, red chilli powder, turmeric powder, salt, sugar, black salt, asafoetida, mango powder, black pepper, ginger powder, garlic powder, citric acid and vinegar to the bowl.
Mix all the ingredients together until they are well combined.
Place the mixture in a glass jar and seal it tightly.
Place the jar in a cool, dry place and let it sit for at least two weeks.
After two weeks, your aam ka achaar is ready to be served. Enjoy!
