Peel the potatoes and cut them into small cubes.
Heat oil in a pan, add mustard seeds, cumin seeds and let them splutter.
Add the potato cubes, turmeric powder, red chilli powder, and salt.
Stir well and cover the pan.
Cook on a low flame for about 20 minutes or until the potatoes are cooked and crispy.
Stir occasionally to avoid the potatoes from sticking to the pan.
Once the potatoes are done, turn off the heat and serve the aalu fry hot with rotis or rice
