Egg & Spinach Muffin

Ingredients
  

  • 4 large Eggs, beaten
  • A large Pinch of Salt
  • 1/2 tsp Black Pepper
  • 1/4 cup Fresh Spinach, Chopped
  • 50 gms Cherry Tomatoes
  • 1/3 cup Mozzarella Cheese
  • 1 tbsp Virgin Olive Oil

Instructions
 

  • Combine 4 large beaten eggs, a large pinch of salt, 1/2 teaspoon black pepper, 1/4 cup fresh spinach, 50 gms chopped cherry tomatoes, 1/3 cup Mozzarella cheese, and 1 tablespoon virgin olive oil in a mixing bowl, stir well, and pour into a muffin mould.
  • Bake for 20 minutes at 200°C and enjoy your freshly baked nutritious muffins!
