Baked methi mathri
Baked Methi Mathri is a traditional Indian flaky snack that is served with tea. Excellent news! It's baked rather than fried. They're delicious snacks that may be made ahead of time for the holidays. Make a batch this holiday season and serve with a cup of chai.

- 1 cup multigrain flour
- 1/2 methi leaves, chopped
- 1 tsp cumin seeds
- 1 tsp sesame seeds
- 1/4 tsp turmeric powder
- 1/4 tsp chilli powder
- 1 tbsp ghee
- Salt to taste
- 1 cup cold water
Combine all of the ingredients and work them together to form a stiff dough.
Set aside for 15 minutes, covered.
Roll the dough out as thinly as possible, using dry flour if necessary.
Cut the dough into 1-inch squares and poke with a fork.
Spread them on a baking sheet and bake at 180°C for 8-10 minutes, or until light brown in colour.
Allow to cool before storing in an airtight container.
