#1 Cranberry Vinaigrette

This dish can be prepared with fresh or dried cranberries. Cranberries, herbs, and vinegar are the main ingredients in this dish that comes packed with flavors.

Ingredients
  

  • 1 peeled and quartered small onion
  • 1/2 cup cranberry
  • 1/4 cup extra virgin oil
  • 14 cup flax seed or walnut oil
  • 2 tsp red wine vinegar
  • 1 tsp chopped thyme, mint or basil
  • 1/4 tsp ground pepper
  • 1 tsp honey
  • Salt to taste

Instructions
 

  • Make a puree with the onion, cranberries, olive oil, walnut oil, vinegar, herbs, honey, salt, and pepper
  • Pour in a jar and refrigerate for about a week
  • Serve with salads, or as a dip
