#1 Cranberry Vinaigrette
This dish can be prepared with fresh or dried cranberries. Cranberries, herbs, and vinegar are the main ingredients in this dish that comes packed with flavors.

- 1 peeled and quartered small onion
- 1/2 cup cranberry
- 1/4 cup extra virgin oil
- 14 cup flax seed or walnut oil
- 2 tsp red wine vinegar
- 1 tsp chopped thyme, mint or basil
- 1/4 tsp ground pepper
- 1 tsp honey
- Salt to taste
Make a puree with the onion, cranberries, olive oil, walnut oil, vinegar, herbs, honey, salt, and pepper
Pour in a jar and refrigerate for about a week
Serve with salads, or as a dip
